🍋✨💋🧿 Stuffed Lemon Custard Cupcakes ✨ With Mascarpone Icing 🍋✨

•  Preheat the oven to 350 and line a 12-cup muffin pan with cupcake liner spray with cooking spray and set aside
• in a large bowl Whisk together flour, baking powder, baking soda.
• In a large bowl, with a hand mixer or stand mixer cream butter and sugar until light and fluffy.then add eggs one at a time until full incorporated
• add sour cream, crème fraîche milk, lemon juice, lemon zest, and vanilla extract and lemon extract, Mix until smooth. add the dry ingredients mix together well
• add batter to lined cupcakes and bake in oven for about 20 minutes or until toothpick comes out clean.
• take a piping tip and play surgeon and gently twist the it in the middle of your cupcake pop out the center and now you have a little pocket for your filling.
• you can use my custard recipe or buy lemon pudding and pipe the filling in the middle and put the cupcake piece back on the cupcake.

Icing

• Use an electric hand mixer to beat the mascarpone, vanilla, and salt.
• slowly pour in the heavy whipping cream. Continue to beat until the mixture thickens enough to hold a soft peak. add 1 cup of powdered sugar and mix on medium-low speed to blend. Check the consistency and add more powdered sugar 1bsp at a time if you want the frosting to be thicker.
• once to your desired constancy add into a piping bag and assemble to cupcakes and enjoy.
