
💋✨🧿Rotisserie Chicken Fajita Casserole 🐓✨💋
Ingredients
- 1 Rotisserie chicken shredded
- 4-5 cups Cooked Rice depending on how much rice you like.
- 1 15oz Can black beans
- 1 15.25oz Can of corn
- 1 10oz can of red enchilada sauce
- 1 15oz Tostitos cheese Tostitos Medium Salsa Con Queso Dip
- 2 Fajita Seasoning Mix McCormick
- 1 10oz can rotel
- large tomatoes diced topping
- green onions diced
- 1 cup shredded cheese blend
- salsa optional for topping
- sour cream optional for topping
- diced jalapeños optional for topping
Instructions
- preheat oven to 375 degrees.
- Once you have removed all of the meat from the chicken discard the skin and bones
- place the chicken in a large mixing bowl and use a handheld electric mixer on low speed to shred it until it reaches your desired texture. remove about a 1/4th of cup to use for topping of casserole.
- then begin adding all of the ingredients to the bowl except the cooked rice you want to make sure all of the other ingredients are well combined first.
- then add in your rice 1 cup at a time. I love a lot of rice and so the more rice the better but if you prefer not just stop add once your meat mixture reaches the constancy you like.
- add into a prepared baking dish. top with shredded cheese extra chicken tomatoes green onions and cover bake for 30 minutes or until cheese is nice and bubbly.
- remove from oven and add salsa sour cream and serve and diced jalapeños. Serve with warm tortillas on the side and enjoy!
