Jamaican Jerk Chicken with Rice and Peas
So I went to Jamaica and I fell in love with the jerk chicken. I had jerk chicken 4 times a day breakfast/lunch/dinner and a snack! I ate it so Before I left I made sure to get a recipe from a local and also I got a few seasonings to bring home with me so I can enjoy it whenever I want. This was so delicious.
Ingredients
- 1 pack Chicken thighs you can use chicken breast
- Easispice Jerk Seasoning Walkerwsood Traditional Jamaican Jerk Seasoning
- Easispice All Purpose seasoning use allspice 2tbsp in place of all purpose seasoning
- 3 tbsp olive oil extra virgin olive oil
- 1/2 cup red Kidney beans dry
- 1 1/2 cups coconut milk
- 2 scotch bonnet pepper jalapeño pepper
- 1 1/2 cups chopped onion
- 4 tbsp minced garlic
- thyme
- 3 scallions
Instructions
- clean chicken and drizzle olive oil and cover chicken with jerk chicken seasoning make sure its coated well.
- sprinkle Jamaican all purpose seasoning on both sides allow chicken to marinate in seasoning overnight.
- soak the peas in a bowl at room temperature. Overnight is best!

- Fill the pot with water should be about 2 inches over the peas. Bring to a boil.
- Add the onions, garlic, scallions, & thyme. Add in all purpose seasoning . Add a full scotch bonnet pepper
- cook for 45 minutes and Peas may cook quicker depending on how long you soaked them.
- add cool water as needed to make sure that the peas don't burn. Watch the peas You know that the peas are cooked when you can break the peas
- Remove pepper. Add the coconut milk and the uncooked rice. Stir throughly.
- In about 30 minutes you will have fluffy and yummy rice and peas!
Notes
This recipe is a learning curve. Make sure you are watching the peas so they do not burn. this is an extremely tedious task. But if you let them soak it will be easier to cook. Look on amazon for the seasoning, this was soooo delicious I hope y’all enjoy it like I did!
