Kane’s oatmeal creme pies
Kane’s Oatmeal Creme Pies
These are Kane's Favorite treats in the entire world. He loves Oatmeal creme pies, So I Found a Recipe and added my own little twist to it Made it Kane Approved.
Ingredients
- 1 cup butter room temp
- 1 ½ cup light brown sugar dark brown also works
- 2 1/2 cups cooking oats do not use instant
- 2 Large eggs
- 1/2 cup granulated sugar
- 1 tbsp dark mild molasses
- 1 tbsp vanilla extract
- 1 ½ cups flour all purpose
- 1 tsp baking soda
- 1 tsp kosher salt
- 1 tsp ground Cinnamon
- 1/3 tsp ground clove
- 1/2 cup shorting used crisco
Filling
- 1/2 cup butter room temp
- 1/2 cup shortening
- 2 cups powdered sugar
- 2 1/2 tbsp heavy whipping cream
- 2 tsp pure vanilla extract
- 1 7 oz jar marshmallow fluff
Instructions
- Preheat oven to 350°F. Line large baking sheets with parchment paper spray with cooking spray
- Using an electric stand mixer, *hand mixture will work fine* cream together butter, shortening, brown sugar and granulated sugar. Beat until fully combined.
- add eggs, molasses and vanilla to the cream mixture Beat until creamy for 1 minute.
- in a separate bowl, whisk together oatmeal, flour, baking soda, salt, cinnamon and clove using a whisk.
- Lower the speed of the mixer and gradually add dry ingredients to the creamed ingredients slowly scrapping the sides… periodically The dough will be thick.
- Using a medium ice cream scoop or spoon divide the dough equally into mounds. leaving enough space between each cookie
- Bake in batches for 10 minutes, or just until the edges are golden. Cool for 10 minutes on the pan, then carefully move to a cooling rack to cool completely.
Filling
- Using an electric mixer, cream butter and shortening with vanilla extract
- Lower the speed of the mixer gradually adding the powdered sugar and cream. Once combined, Add marshmallow cream, then beat on high for 2 minutes.
- Divide filling evenly among cookies. Top each cookie with a matching size cookie. enjoy
