S’more Cookies

S’mores Cookies

So I have a love for s'mores I really enjoy them. But I don't have the ability to walk build a fire and have a nice s'more anytime I want. So I decided to combine my favorite thing a cookie & a s'more and these were so delicious and you'll want S'more!
Prep Time 20 minutes
Cook Time 45 minutes

Ingredients
  

  • 2 sticks butter
  • 3/4  cup  light brown sugar packed
  • 1/2 cup sugar granulated
  • 2 tbsp pure vanilla extract
  • 2 1/2 cup  all-purpose flour
  • 2 large eggs
  • 2 tsp cornstarch
  • 1 tsp baking soda
  • 1 tsp kosher salt
  • 2 1/2 cups mini marshmallows
  • 7 broken graham crackers
  • 1/2 cup milk chocolate chips I use Ghirardelli 
  • 3 chocolate Hersey bars cut up

Instructions
 

  • Preheat oven to 350 degrees and Line baking sheet with parchment paper.
  • in a large bowl, combine butter, brown sugar, and granulated sugar. Beat 3 minutes until creamy.Add eggs and vanilla and beat well until fully mixed
  • add flour, cornstarch, baking soda, and salt, mix with spoon until combined
  • add about half of the graham cracker pieces, 1 1/2 cups of the marshmallows, milk chocolate chips, fold all ingredients just until all mixed throughout the dough.
  • Scoop even large size balls of dough onto the baking sheets, leaving room in between each cookie place baking sheets in the refrigerator for about 30 minutes
  • take cookies out of fridge and Bake for 10 minutes until almost done, then remove from the oven and add additional marshmallows on top of each cookie, along with pieces of broken-up graham cracker and pieces of Hershey bar.
  • switch oven to broil and toast the marshmallows on top. until marshmallow are nice and brown looking toasty.
  • Cool for 2-3 minutes on the pan before transferring to a wire cooling rack. and Enjoy!

Notes

Sometimes the marshmallows can spread, If you want to omit the marshmallows from the recipes until the end that’s okay. they can sometimes spread so waiting until the end to top the cookies with marshmallows might be better.
