Lemon(E) Lemon Pound Cake
So I love a pound cake,Probably one of my favorite desserts next to cookies. But this is so delicious and super good! Do not let it overwhelm you with the steps its worth it at the end Pinky Promise.
Lemony Lemon Pound Cake
So I keep Lemons In my Home because I love a lemon & you Just Never Know when you're going to need to add a little Zest in your life Lemons Are required I love anything Lemon(E) just taste Better I hope you Love This Lemon Pound cake 🙂
Equipment
- Stand Mixer Or hand Mixer
Ingredients
- 3 cups cake flour All purpose flour also works
- 1 tsp baking soda
- 2 sticks salted butter room temp
- 2 cups sugar
- 3 Large Eggs
- 1/2 cup buttermilk
- 1 cup sour cream
- 4 tbsp lemon juice about 2 large Lemons will work
- lemon zest use the lemons for the juice for the zest
- 1 tbsp vanilla extract
Lemon juice glaze
- 1 cup powdered sugar
- 4 tbsp lemon Juice about 2 lemons
- 1 tbsp vanilla extract
- 1 tsp almond flavoring
Lemon frosting
- 4 oz cream cheese
- 1 tbsp lemon zest 1 lemon will work
- 1/2 cup lemon Juice about 3 Large lemons
- 3 cups powdered sugar
- 2 tbsp Vanilla extract
Instructions
- Preheat Oven to 350
- add flour, baking powder into a large mixing bowl make sure you swift the flour. Set aside.
- In your Mixer add your butter and sugar beat until light and fluffy,Beat in eggs, one at a time, make sure egg is fully incorporated before adding another one.
- Mix in the sour cream, vanilla, lemon zest, and lemon juice
- pour half of the flour mixture into the butter mixture. mix until flour is no longer visible, slowly incorporate half of the buttermilk while mixer is on. TURN OFF MIXER! then add in the remaining flour mixture and the remaining butter milk Mix just until the flour disappear.
- Pour the batter into your favorite bundt pan that has been generously sprayed with baking spray or prep the pan to your liking. 🙂
- Bake for 40 minutes on 350 then turn the oven down to 325 and bake for another 15 minutes or until a toothpick inserted in the center of the cake comes out clean. when cake is finished remove from oven and immediately pour the lemon juice glaze over the cake and allow the glaze to soak into the cake
- Let the cake cook for an hour and remove cake from Bundt pan. and top with frosting and add lemon zest to top and cut and enjoy 🙂
Lemon Juice Glaze
- Whisk the powdered sugar and vanilla extract/ almond extract and lemon juice together and mix until smooth.
Lemon Frosting
- Mix the all the ingredients together until smooth and creamy taste to your liking.
Notes
You can use the lemon juice that comes into the bottle so you do not have to use fresh lemons.
Also If you do not have salted butter you can use unsalted and add in 1tsp of salt
All purpose flour works just fine, I enjoy using cake flour because that what my Grandmomma uses:)
