Fajita Chicken Cheese Rice
This dish is so delicious fajita chicken cheese rice. its cheesy and it taste so good, Super easy dish for those busy weeknights when you don't feel like all you need is one pan. This will defiantly stay on rotation during the week.
Ingredients
- 2 pounds diced chicken brest cut into bite size pieces
- 1 packet Fajita seasoning used McCormick seasoning.
- 3 tbsp olive oil coat the bottom of pan
- 1 10oz Vigo Saffron Yellow Rice
- 1 tbsp tomato Boullion or cube
- 2 cups water
- 1 cup chicken stock
- 1 15oz Jar white Queso dip use any Queso you would like
- pico or salsa for topping
Instructions
- In a large bowl add the diced chicken and sprinkle the fajita seasonings all over. mix together well making sure the chicken is well coated.
- In a large deep Pan add the olive oil to the bottom of the pan and add in the diced chicken breast cook until browned on all sides.
- Once the chicken is done cooking add the entire package of rice and tomato bullion and water and the chicken stock. stir all ingredients together bring to a boil for about 2 minutes and reduce heat to low. Cover with a lid make sure the lid fits with no air "holes" or rice will not cook completely.
- Cook rice for about 15 minutes check to see if it's absorbed the water if not continue cooking for another 10 minutes checking on the rice periodically.once finished add the Queso let melt into the rice add cilantro and serve.
Notes
You can add pico and sour cream to this rice.
Also if you want to make a pot of this and serve with Warm tortillas this will also be perfect for an easy taco recipe.
I have added bell peppers to it.
