Ingredients
- 2 16oz pinto beans, undrained
- 2 tbsp cooking oil
- 1/2 cup diced onion
- 2 garlic cloves minced
- 1 tsp black pepper to taste
- 2 tsp garlic powder optional, for extra flavor
- 1 tsp smoked paprika
- 1 1/2 cups cooked ground beef seasoned with taco seasoning
- 1/2- 1 cup shredded mozzarella cheese
Toppings
- Sour cream
- Fresh jalapeños sliced
- Diced tomatoes
- Fresh cilantro chopped
Instructions
- Preheat oven:375°FIn a pot over medium heat, add oil to coat the bottom of the pan.Add diced onion and garlic. Sauté until soft and fragrant.
- Add both cans of pinto beans to the pot Season with black pepper, smoked paprika, and garlic powder. Stir and let simmer for about 5-10 minutes.
- Use a potato masher to mash the beans until they reach a refried-bean texture.Transfer the mashed beans into an oven-safe serving dish
- top evenly with about 2 cups of seasoned ground beef, Sprinkle mozzarella cheese generously over the top.Bake in oven for 10-15 minutes until cheese is melted and bubbly.Remove from oven and finish with sour cream, fresh jalapeños, diced tomatoes, and chopped cilantro.
