Ingredients
- 5-6 cups leftover Cajun dirty rice
- 2-3 Large Eggs
- ¾ cup Red Lobster Cheddar Bay Biscuit Mix
- 1 cup shredded pepper jack cheese
- 4 large eggs breading
- 3 cups Japanese-style panko breadcrumbs breading
- Melted butter for brushing after frying
- vegetable oil for frying
Instructions
- In a large mixing bowl, add the leftover Cajun dirty rice.
- Crack in 2–3 eggs and mix until combined
- Add the Cheddar Bay Biscuit Mix and stir well.Fold in the shredded pepper jack cheese until everything is evenly mixed.
- Roll the mixture into golf ball-sized balls, pressing them firmly so they hold their shape.
- Place the rice balls on a baking sheet or plate and freeze for about 1 hour. This helps them stay together while frying.In one bowl, beat the remaining 4 eggs. Place the Japanese-style panko breadcrumbs in another bowl.
- Heat about 2–3 inches of oil in a deep skillet or Dutch oven to Carefully fry the breaded rice balls in batches for 3–5 minutes, turning occasionally, until they're golden brown and crispy on all sides.
- Remove to a paper towel-lined plate or wire rack and immediately brush with melted butter before serving.
