Chicken Tomato Pasta

I love pasta, But sometimes pasta can be too “rich” lol just kidding! But no seriously during the summertime I enjoy a nice light pasta dish,Nothing to heavy and I love the option of severing something cold or hot and this dish does exactly that.

Chicken Tomato Pasta

This pasta is so delicious It can be served Hot or you can throw it in the refrigerator and serve it as a nice side at a bbq either way you can't go wrong because marinated chicken breast really take this pasta to another level!

Ingredients
  

  • 3 boneless skinless chicken breast
  • 1 cup extra virgin olive oil you are going to use half for the marinade and the other half to incorporate into the pasta
  • 1 tsp dried oregano
  • 2 tbsp garlic powder
  • 1 tsp cayenne pepper
  • 1 tbsp Italian seasoning
  • 1 tbsp all purpose seasoning any kind will work
  • 2 tbsp chicken seasoning
  • 1 lemon lemon juice
  • 1 bag bowtie pasta any pasta will work
  • 2 large tomatos you can use cherry tomatoes
  • 6 garlic fresh chopped garlic I love garlic you can half this I just love garlic
  • 1 yellow onion diced
  • salt & pepper for taste

Instructions
 

  • n a small bowl combine all of the spices and 1/2 cup of olive oil in a bowl mix well and sprinkle evenly all over the chicken. let marinate in fridge for 2 hours overnight is always better
  • Cook or grill the chicken until no longer pink inside and let it rest for at least 5 minutes before dicing it.
  • in the same sauce pan coat the bottom of the pan with oil and add in diced onion and garlic get
  • Cook the pasta according to package instructions make sure to salt your water , drain
  • add the pasta to sauce pan coat with the remaining olive oil and also want to season your pasta so salt & pepper to taste also add in about 1tsp of garlic powder and 1tsp of italian seasoning
  • add in the tomatoes and top with chicken top with parsley and enjoy!

Notes

you can serve this dish hot or cold it will taste amazing. 
Also you want to season the pasta so make sure the seasonings you put in the chicken marinade you want to also use 1tsp of each for the pasta once it’s cooked! Make sure you taste while cooking and add salt & pepper to your taste buds!
