Instructions
- Make the Flour PasteAdd the bread flour, milk, and water to a small saucepan.Cook over medium-low heat, stirring constantly, until the mixture thickens and becomes smooth, almost like pudding.Remove from the heat and allow it to cool for about 10–15 minutes.
- Activate the YeastAdd the slightly warm milk and warm water to the bowl of a stand mixer.Sprinkle in the yeast and sugar and gently stir.Let the mixture sit for about 5–10 minutes, or until the yeast becomes foamy on top.
- While the yeast is activating, add the bread flour, salt, and cinnamon to a separate bowl.Whisk everything together and set aside.
- Once the yeast is foamy, add the cooled flour paste, honey, and egg to the mixing bowl.Add the flour mixture.Using the dough hook, mix on low speed until the ingredients begin to come together and form a shaggy dough.
- Knead on medium-low speed for about 5 minutes.Add the softened butter a little at a time, allowing it to work into the dough before adding more.Continue kneading for another 8–10 minutes, or until the dough is smooth, stretchy, and slightly tacky. The dough should pull away from the sides of the bowl but may still lightly stick to the bottom.
- Transfer the dough to a lightly greased bowl.Cover and let rise in a warm place for 1–1½ hours, or until doubled in size.
- Gently press the air out of the risen dough.Divide the dough into 9–12 equal pieces.Shape each piece into a smooth ball and arrange them in a greased baking dish.
- Cover the rolls and allow them to rise for another 45–60 minutes, or until soft, fluffy, and noticeably puffy
- Prepare the Egg WashPreheat the oven to 375°F.Whisk together the egg, cold water, and pinch of salt.Gently brush the egg wash over the tops of the rolls.
- Bake for 18–22 minutes, or until the rolls are beautifully golden brown and baked through.
- While the rolls are baking, mix together the softened butter, honey, cinnamon, and a small pinch of salt.
- As soon as the rolls come out of the oven, brush the tops generously with the cinnamon-honey butter.Serve warm with extra honey butter on the side if desired.
