Crawfish ”Boil” Quesadillas
When Its too hot to have a seafood boil, But you still want that taste these will do the trick! They are quick and new to add to dinner rotation.
Crawfish Boil Quesadilla’s
My Love for Mexican food and also good Cajun seafood boil help me create the Easy tasty recipe! It's so GOOOD! Honestly it doesn't take long at all. Just combined my favorite food into one.
Ingredients
- Medium Flour tortillas
- 4 pounds cooked crawfish you can also use frozen crawfish meat
- 2 potatoes peeled and diced
- 1 cup corn
- 3 bell peppers chopped red/ green and yellow bell peppers
- 3 cups pepper jack cheese
- 2 tbsp old bay seasoning
- 1 tbsp cajun season
- 4 garlic cloves chopped
- 2 tbsp olive oil
Instructions
- preheat oven to 350 in a small baking dish add potatoes and season with 1tbsp of old bay and salt & pepper and drizzle about 1tbsp of oil on top and place in oven for 30 minutes until crispy and golden brown.
- remove the crawfish meat from tails place in glass bowl and set aside
- in a large pan over medium heat coat the pan with olive oil, add in bell peppers and garlic you want them to cook down just a little, then add in crawfish meat and corn and season and mix until well combined and the crawfish tails have all the flavor Incorporated in.
- in another skillet on low heat place a tortilla down fill top with cheese and the potatoes and crawfish mixture. top with more cheese and place tortilla shells on top flip until golden brown. cont this step until all of the filling has been used.
- cut tortillas in half and enjoy, with remoulade sauce or with salsa and sour cream.
Notes
you can Always use frozen crawfish as a substitute. It’s also easier so you d not have to peel if you use the frozen crawfish get 2 (12oz) packs.
You can cook the potatoes however you like I just love the crunch to it.ย
If you do not have old bay seasoning you can substitute with “slap ya mama” But old bay Is Preferred.
