Scallop Pasta

I'm a huge pasta & seafood Lover, So anytime I can create a dish that incorporates my love for pasta and seafood I'm going to do just that ๐Ÿ˜‰

Servings 6

Ingredients
  

  • 2 tbsp Olive Oil Extra virgin
  • 3 tsp garlic
  • 1 8 ounce Box Of Penne Pasta
  • 1 tbsp sun dried tomatoes
  • 1 1/2 pound scallops If you love scallops or just want extra meat use 2 pounds. you can never have too much meat ๐Ÿ™‚
  • 2 cups heavy cream
  • 1 cup fresh mozzarella cheese
  • 1 tsp old bay seasoning
  • 1 tsp garlic powder
  • 1 tsp Cajun seasoning
  • pinch red pepper flakes

Instructions
 

  • boil and cook the pasta according to package *save cup of pasta water*
  • In a large skillet Add olive oil and add the garlic and sun dried tomatoes cook for 1 minute
  • add heavy cream and mozzarella cheese whisk until sauce starts to thicken add garlic powder add pasta
  • in separate skillet add scallops season with old bay and Cajun seasoning, cook scallops on medium heat, sear on each side for about 2-3 minutes each
  • and scallops to pasta and sprinkle with red pepper flakes and parsley and enjoy.

Notes

  • Cook pasta according to package instructions.ย  Drain the pasta. save cup of pasta water
  • Heat 2 tablespoons olive oilย  in a large skillet on medium-high heat. Add sun-dried tomatoes (drained from oil and sliced into smaller pieces,ย  and minced garlic, and sautรฉ on medium heat, stirring, for 2 minutes until the garlic is fragrant. The skillet should beย 
  • Add heavy cream to theย  skillet with sun-dried tomatoes and bring to boil. Add shredded cheese to the skillet, and stir in while boiling.ย  stirring, until all the cheese melts and the creamy sauce thickens. If the sauce is too thick, add a small amount heavy cream or reserved cooked pasta water.

  • Add cooked pasta to the sauce, and reheat gently on medium heat. Taste, and add more salt & pepper if needed. Add a small amount of heavy cream orย  cooked pasta water, if the sauce is too thick. Let everything simmer on low heat for a couple of minutes for flavors to combine.
    ย Season each scallop with old bay
  • Use a small cast iron skillet for best resultsย  non-stick skilletย ย 
    Add scallops without overcrowding the pan. Sear on one side for about 2-3 minutes until the bottom is nice golden color. Don’t move the scallops around the pan in the beginning.
  • Turn the scallops to the other side and cook for 1 more minute. Remove from heat and transfer the scallops to dish immediately. Don’t let the scallops sit in the hot skillet,ย  they w lose their golden crust and harden up.
    Add cooked scallops to the pasta and the cream sauce and. Serve.
  • top with parsley and red pepper flakes
