The Best Blackberry Cobbler
THE BEST BLACKBERRY COBBLER.
I am ashamed to say 2023 Is the first time I've ever had a blackberry. That was not a fruit that I grew up eating and tasting it was extremely delicious! Very sweet and it didn't look how it was suppose to taste But omg! This fruit was the best thing ever:) so thanks to my hunny for that! So I had to make a cobbler with dumplings because that's the only way!
Ingredients
- 2 quarts blackberries fresh frozen is fine as well
- 2 cups Granulated sugar
- 1 stick unsalted butter
- 1 large lemon juiced
- 1/2 cup water
- 1 tbsp pure vanilla extract
Dumplings
- 3 tbsp sugar
- 2 cups flour all purpose
- 2 sticks cold butter
- 2 tsp baking powder
- 1/2 cup milk
CRUST
- 1 cup Flour
- 1 tsp salt
- 1/3 cup Crisco butter flavored
- 1/2 cup water
Instructions
- Preheat oven to 350 degrees spray a baking dish with non stick cooking spray.
- Put a Large Pot on the stove on low heat and add the blackberries and sugar ,water, one stick of butter and lemon juice and vanilla and bring to a low boil.
- while the blackberries are coming to a boil prepare the crust add the flour and salt and crisco to a bowl and begin to pour water slowly while working the dough with your hands. until it forms a ball. don't over "work"
- Take half of the dough and roll it out to fit the bottom of the baking dish. lightly sprinkle flour on the counter when rolling the dough out. and lay the crust on the bottom of the baking dish. prep the other piece the same and set aside to top the crust.
Dumplings
- in a medium bowl stir flour, sugar and baking powder and salt. cut the butter in the dry ingredients and use a fork to blend together. the mixture should resemble sand and start to stir the milk to form dough.
- start to make " dumplings" by taking the dough and making small "balls and set aside. once you have made as many small balls they should be the size of about 1/2 tablespoon. set aside
- once the blackberry sauce is on a low boil ad the dumplings in the sauce replay quick mix together and cook for about 1 minute and pour the sauce into the baking dish and add the top crust. cook in the oven for about 30 to 35 minutes or until crust is golden brown
- Remove from the oven and let sit for about an hour and serve with ice cream and enjoy.
Notes
You can buy crust instead of making your own to save time I recommend Pillsbury frozen crust.ย
if you use frozen blackberries do not unthaw to cook them… cook them frozen.
