The Best Chocolate Chip Cookies Ever
Your Favorite cookie lover here! I love an easy bedtime snack to enjoy! Who doesn't want to enjoy these cookies as a bedtime snack. I hope you love them as much as me and the kiddos.
Ingredients
- 1 cup cake flour
- 3/4 cup all purpose flour
- 3 tsp sea salt
- 1 tsp baking soda
- 1 cup melted butter browned let cool before incorporating in ingredients
- 1/2 cup brown sugar I used dark
- 1 cup sugar
- 3 tsp vanilla extract
- 1 tsp expresso powder
- 2 eggs one egg & one egg yolk
- 1/2 cup semi sweet chocolate chips
- 1 oz dark chocolate bar cut into chunks / medium chocolate bar cut into chunks
Instructions
- Preheat oven to 300. you do not want these cookies to cook too fast low and slow.
- in large saucepan, melt the butter over medium heat a Bring it into a boil and stir constantly for the butter to brown evenly. Once you can see dark brown pieces at the bottom put it into a glass measuring cup. and make sure it cools down put in a fridge want it to cool!
- in a medium size mixing bowl sift together the Flours, Salt and Baking Soda then set aside.
- In a separate mixing bowl, add the Sugars, Vanilla, Espresso and Brown Butter then mix it altogether with an electric mixer on medium speed until it is creamy. Then add the Egg and the Egg Yolk and mix it until it has been fully incorporated.
- Then add the dry slowly ingredients and beat it between additions, it doesn't have to be well incorporated, a tiny bit of flour is okay Add the Chocolate and fold it in with a spatula
- Scoop a small ball (about the size of 3 tablespoons) with the cookie dough and place it into a parchment paper lined baking sheet, then place in refrigerater for 3 hours or overnight!
- then let sit for about 5 minutes out of fridge and place in oven let bake for 20 minutes or until golden brown and cool and ENJOY!
Notes
You can top the cookies off with sea salt and even add nuts into the batter to make pecan chocolate chip cookieย
Also for more of a brown cookie add 1/2 cup of white sugar and 1 cup of brown sugar to get a “darker cookie”
