The Best Pecan Pie Cheesecake

Pecan Pie Cheesecake

I love pecan pie and also cheesecake and this recipe allows you to have two worlds in one! kinda like Hannah Montana! (you get the best of both worlds)

Ingredients
  

Pecan Crust

  • 3/4 cups chopped pecans
  • 12 whole Graham crackers or cinnamon graham crackers
  • 5 tbsp butter unsalted

Cheesecake

  • 16 oz cream cheese want your cream cheese room temp
  • 3 large eggs
  • 1 1/2 cups sugar
  • 3 tbsp pure vanilla extract
  • 1/2 cup heavy whipping cream
  • 1/4 cup corn starch
  • 1/4 tsp Koshar salt

pecan topping

  • 1 1/2 cups whole pecans
  • 1/2 stick of unsalted butter
  • 3/4 cup brown sugar
  • 1/2 cup heavy whipping cream
  • 1 tbsp pure vanilla extract

Notes

  •  Take cream cheese out of their wrappers and let sit at room temperature Arrange a rack in the lower-middle position of the oven and pre- heat the oven to 350°F
  • for the crust  add graham crackers and chopped pecan to a a food processor with the blade attachment blend until the graham crackers and pecans become fine crumbs. Then began to add  melted butter until the constancy feels and looks like wet sand.
  •  Transfer the crust mixture into 8 inch spring form (non stick) pan and use the bottom of a measuring cup to press it evenly into the bottom. 
  • Place the crust in the oven  Bake until the crust is fragrant and just starting to brown around the edges, 8 minutes remove from oven and set aside.
  •  Place the cream cheese,  granulated sugar,  cornstarch  and 1/4 teaspoon kosher salt in the bowl of a stand mixer fitted with a paddle attachment. Mix on medium-low speed until the mixture is creamy like thick frosting and smooth, about 5 minutes. Scrape down the beater and the sides of the bowl with a spatula
  • add vanilla extract and beat on medium-low speed until combined and creamy. Scrape down the beater and sides of the bowl again. With the mixer on medium-low speed, beat in 3 large eggs one at a time. Wait until the egg is almost completely mixed into the batter before adding the next one.
  • Stir the whole batter a few times by hand, being sure to scrape the bottom of the bowl, to make sure everything is mixed. The finished batter should be thick, creamy, and silky.  Pour the batter over the cooled crust and spread it into an even layer.
    Place the pan in oven  and use another  roasting pan filled with water on the second rack in oven directly under cheesecake mixture ( or you could do a typical water bath) 
    Bake the cheesecake for 55 minutes. The cheesecake is done when the outer 2 to 3 inches look a little puffy and set, but the inner circle still jiggles  when you gently shake the pan. Some spots of toasted golden color are fine. any cracks turn oven off immediately
    Leave the cheesecake in the oven. Turn off the oven and crack the door open let cool for an hour 
    remove cheesecake from oven and set on counter on rack for another hour
    Chill the cheesecake, uncovered, for at least 4 hours  in the refrigerator. don’t rush it the perfect cheesecake you have to allow everything to set in, and allow cheesecake to set in fridge uncover.
    Make the pecan pie topping
    Place  unsalted butter, 3/4 cup packed dark brown sugar,  in a large saucepan over medium heat.  whisk frequently, until the butter is completely melted and the mixture is completely smooth and bubbly this should take 7 minutes. Whisk in  heavy cream until completely combined and bubbling again add in pecans and vanilla extract mix together. let sauce sit for about 30 minutes
    Take the cheesecake out of the refrigerator , remove from spring foam pan or use a large spatula to gently remove the crust from the pan and transfer it to a serving platter. pour the pecan pie topping over the cheesecake and enjoy!
     
    Notes: I always allow my cheesecake to sit overnight in the fridge it helps me have peace of mind knowing that it will bet Set 🙂
