- 5 tbsp flour all purpose
- 1/4 cup unsalted butter
- 1/2 cup chopped celery
- 1/2 cup chopped green peppers
- 3 tbsp fresh parsley chopped
- 1 tbsp tomato Paste

- 1 tbsp Zatarain's Concentrated Shrimp & Crab Boil
Instructions
- In a Dutch oven, melt the butter and then stir in the flour. Cook and stir constantly over low heat for about 20 minutes, until mixture is a caramel like a Twix…. going to be a paste
- then Add in the celery, pepper and onions; stir until mixed with the roux
- Add the broth, water, parsley, tomato paste, bay leaf, and all seasonings . Stir well to make sure that there are no lumps.
- Bring to a boil then add in the liquid boil… Reduce heat to low, cover and simmer for 30 minutes, stirring occasionally. Remove the bay leaf. Add crawfish and heat through. Serve over rice.
Notes
Instead of chopping all the vegetables you can buy a frozen bag of bell peppers etc to save time.
Also if you do not have stock water will work just fine:)
No vegetable stock chicken stock or seafood stock will work!
Please season to your taste buds if you need to add a little bit of something else DO IT. ONLY YOU KNOW YOUR TASTE BUDS 🙂
