
🍋Lemon Cookies 🍋
Ingredients
- 1/3 Cup Flour
- 1 stick soften butter salted
- 1 tbsp lemon juice
- 1 tsp lemon flavor extract
- 1 large egg room temp
- 1tsp brown sugar
- lemon zest from large lemon
- 1/2 tsp baking soda
- 3 drops yellow food coloring
- 1/2 tsp almond extract
Instructions
- in bowl mix together flour baking soda and a pinch of lemon zest
- with a handheld mixer or stand mixer you're going to mix together the butter and sugar's until nice and fluffy and then incorporate the egg mix until combined.
- while the mixer is on low speed add in the remaining lemon zest, lemon flavoring, lemon juice, food coloring almond extract.
- fold in the dry ingredients to the wet ingredients cover and refrigerate overnight or 1 hour line baking sheets with parchment paper and preheat oven to 350 while cookie dough is chilling in the fridge.
- remove cookie dough from fridge and use a cookie scoop and form a ball continue until all dough is gone giving space for the cookies to expand
- bake for about 9-10 minutes or until the cookies are done completely let the cookies be slightly undercooked the will finish cooking and setting while they cool off. top with more lemon zest or sugar and enjoy.
Notes
before you place the cookies in the oven you can have about 1/4 cup of turbinado raw sugar on a plate and roll the balls of cookies in the sugar before baking the cookies will come out looking extra sparkly.
