Chips Ahoy Cookie Cake

In this house we love cookies! Consider us the cookie monster's We love cookies and sweets and we do not apologize for it! So My son was heavy on a chips ahoy cookie and Me and Ro love cookies with Pecans 🙂 So I decided to do a clash of the titans and make a cake something that WE ALL LOVE IN THIS HOUSE! It turned out Perfect it was the perfect amount of sweetness and richness that you could ask for! So I would say try it!

Equipment

  • Kitchen aid Mixer *Handheld Mixer works perfectly also*

Ingredients
  

  • 3 cup All purpose Flour
  • 2 tsp Baking Powder
  • 1/2 tsp kosher salt
  • 3 sticks Unsalted butter Room temp
  • 2 tbsp pure vanilla extract
  • 1/4 cup corn starch
  • 4 eggs Large
  • 1 1/4 cup milk one and one fourth cups of milk
  • 1/2 cup chocolate chip minis
  • 2 cups Crushed Chips ahoy save a few whole ones to decorate cake
  • 1/2 cup Pecans

ICING

  • 4 STICKS Butter room temp
  • 14oz can sweetened condensed milk
  • 2 cups Powdered sugar

Instructions
 

  • Preheat oven to 350°
  • Line three 8 inch cake pans with parchment paper. I also use cooking spray on top of parchment paper*
  • in the bowl of the stand mixer beat together butter and sugar until light and fluffy Add eggs one at a time, beating well after each one Add vanilla and mix until combined.
  • In another large bowl, whisk together flour, cornstarch, baking powder, and salt. Add half of the dry ingredients to the wet ingredients, beating until just combined.
  • Pour in milk and mix until fully incorporated. Add remaining dry ingredients and stir until everything is just right
  • Fold in mini chocolate chips and crushed cookies and PECANSSSS 🙂
  • Divide batter evenly between prepared cake pans. Bake until slightly golden on top and a toothpick inserted into the middle comes out clean, about 35-40 minutes. Let cool completely.
  • Assemble cake using frosting between each layer and also adding crushed cookies/ repeat each step until cake is assembled! decorate with chips ahoy or pecans and ENJOY!

MAKE FROSTING

  • in a standing mixer with the paddle attachment, beat butter and salt until light, fluffy, and lightened in color 6 minutes.
  • Slowly beat in sweetened condensed milk until fully incorporated
  • then beat in powdered sugar until smooth.
