Preheat oven to 350°
Line three 8 inch cake pans with parchment paper. I also use cooking spray on top of parchment paper*
in the bowl of the stand mixer beat together butter and sugar until light and fluffy Add eggs one at a time, beating well after each one Add vanilla and mix until combined.
In another large bowl, whisk together flour, cornstarch, baking powder, and salt. Add half of the dry ingredients to the wet ingredients, beating until just combined.
Pour in milk and mix until fully incorporated. Add remaining dry ingredients and stir until everything is just right
Fold in mini chocolate chips and crushed cookies and PECANSSSS :)
Divide batter evenly between prepared cake pans. Bake until slightly golden on top and a toothpick inserted into the middle comes out clean, about 35-40 minutes. Let cool completely.
Assemble cake using frosting between each layer and also adding crushed cookies/ repeat each step until cake is assembled! decorate with chips ahoy or pecans and ENJOY!
