Preheat oven to 350˚F and grease 2 9" round pans with flour and shortening
Beat eggs, shortening, buttermilk, sugar and vanilla until blended on low speed in stand mixer
Add flour, baking soda, cinnamon in a bowl together whisk with a fork, then add the dry mixture into stand mixture mix until fully incorporated. then add in pineapple, grated carrots, nuts and coconuts and raisins. mix with spoon add to greased baking dish.
bake for about 40 minutes or until toothpick comes out clean.
in stand mixture add all ingredients except about one cup of powdered sugar and mix if you want it more loose use less powdered sugar if you want it thicker add the last cup.
take the cake out of the oven let cool and icing the cake. top it with more nuts and enjoy.
