- 7 1/2 cups Apples diced
- 1/4 tsp lemon juice
- 1 tbsp vanilla paste
- 2/3 cups brown sugar
- 3 tsp cinnamon
- 2 tsp nutmeg
- 1 tsp all spice
- 1 tsp cream of tartar
- 1/4 cup butter
- 1 tsp lemon zest
- turbinado sugar topping
- 1 tsp water egg wash
- egg egg wash
- 1 tbsp flour
- pinch of salt
CRUST✨💋
- 2 1/2 Cups flour
- 3 tsp sugar
- 1 cup cold butter cubed
- 6-8 tbsp cold water
- 1 tsp cinnamon
- 2 tsp lemon juice
- 1/4 tsp salt
Instructions
- Add flour, salt, sugar, and cinnamon to food processorPulse 2–3 times just to combine
- Add cold cubed butterPulse in short bursts Mix lemon juice and water Slowly drizzle in while pulsing Stop as soon as dough starts clumping together Dump onto a floured surface Gently bring together Divide into 2 discs, wrap, and chill 30–60 minutes
- Add the apples, vanilla paste, butter, brown sugar, flour, cinnamon, allspice, nutmeg, lemon juice, and salt to a large skillet.
- stir everything together until the apples are fully coated Cook over medium heat, stirring occasionally, until the apples soften and the mixture thickens slightly 10 minutes you’ll know it’s ready when it’s glossy, fragrant, and slightly saucy 😌✨Remove from heat and let it cool completely
- Lightly flour your work surface Roll out one disc to about larger than your pie dish Carefully transfer the dough into your pie plateGently press it into the bottom and sides—don’t stretch. pour the pie filling to the crust
- preheat the oven to 400 F
- roll out second pie crust Roll it out on a floured surface to about 1/8 inch thick
- Use a knife or pizza cutter Cut into even strips (about ½–1 inch wide)Place half the strips across the pie in one direction (parallel)Fold back every other stripLay one strip going the opposite directionFold strips back downRepeat until you’ve woven the whole top.
- press edges together with bottom crustCrimp with your fingers or a fork for that pretty finish
- make your egg wash whisk egg and water lightly brush the egg wash over your lattice or top crust Sprinkle generously with turbinado sugar for that sparkle + crunch.
- Bake at 400 F for 15 minutes (this sets that crust and gives color 👀)Then reduce heat to 350F and bake for 40 minutes 👉 Your pie is ready when:Crust is golden brown Filling is bubbling through the lattice 😌✨

💅🏽 Fancy Mom Tip:
- If the edges start getting too dark, cover them with foil halfway through baking.
- After rolling your crust, lightly sprinkle a touch of cinnamon and sugar on the bottom layer .before adding apples… it creates a slight barrier + extra flavor layer 👀🔥
- DO NOT OVER -PROCESS DOUGH→ that’s how you lose the flaky layers
- You still want to see little butter pieces = that’s your flakiness ✨
- If it holds when you pinch it, it’s READY
- LET your PIE REST FOR 2-3 Hours before cutting (this is KEY for a clean, pretty slice and a set filling)
